There is nothing sweeter than a ripe summer peach. Whether grabbing a fresh peach while running out the door or throwing a few into the blender for a sweet summer gazpacho, there are so many exciting ways to enjoy this delicious stone fruit. Baking is one of my favorite ways to elevate a peach’s natural sweetness, letting the oven heat intensify the natural juice. Just sprinkle with spices and you have a sweet snack or perfect dessert.
What I love most about this recipe is that you can create this delicious dish all-year-round, even when peaches are not in season. Regardless if it’s summer or winter and you can’t wait for your fresh peaches to ripen, this recipe will soften any hard fruit and bring out all of the fragrant peachy flavors we crave. So crank up the oven, grab some stone fruit and let’s get cooking!
Baked Peaches with Spiced Mascarpone:
-4-5 Peaches, unripe (see Tip in Step 1)
-2/3 Cup Mascarpone
-1/2 Teaspoon Mace
-1/2 Tablespoon Cinnamon
-1 Tablespoon Honey (for drizzling)
-Cutting board and knife
-Small mixing bowl and spoon
-Sheet Pan lined with foil or parchment paper
Step 1: Gather and prep your ingredients
Set the oven to 350° F (176° C). Carefully half and remove the pit from each peach, using a small spoon or a mellon baller if the pit is difficult to remove.
Tip: When picking your peaches, the unripe and hard peaches are best for this recipe, although cooking instructions allow for all seasonality. Unripe peaches hold better shape when baking and have a fresher flavor when you pull them out of the oven.
Step 2: Start Baking
Once the oven is ready, pop in your baking sheet, peaches facing cut-side down. The cook-time will vary depending on the ripeness of the peaches. Very firm and unripe peaches will bake for 45 minutes while ripe soft peaches will bake for only 25 minutes. Once some small bubbles form around the peach edges and you can pierce the peach skin with a knife, that is when your peaches are done.
Tip: Make sure the baking sheet is lined properly because these peaches are going to release a lot of juice while baking.
Step 3: Cool Peaches and Mix Ingredients
Letting the peaches cool completely is critical and could take between 15-30 minutes. While the peaches are cooling, mix the mascarpone, mace and cinnamon together in a small bowl till the mascarpone is uniform in color.
Tip: Removing the peaches from the hot sheet pan and placing them on a plate to cool down will get them to room temperature much faster if you are in a hurry. Also, blotting the peach juice from the baked peaches is preferred so they won’t be so runny when serving.
Step 4: Garnish and Serve
After the peaches have cooled completely, you can scoop your spiced mascarpone into the peach centers. To finish the dish, sprinkle some cinnamon and drizzle with honey.
Tip: If the peaches have not completely cooled, the mascarpone will be runny and melt.

- Preheat oven to 350° F (176° C)
- Carefully half and remove the pit from each peach, use a small spoon or a mellon baller if the pit is difficult to remove
- Place peaches, halved side-down in the oven on a lined baking sheet
- Bake until peaches are tender, about 25 minutes for ripe peaches and up to 45 minutes for hard unripe peaches
- While peaches are cooling to room temperature, mix the mascarpone, mace and cinnamon together in a small bowl until uniform in color and texture
- Once the peaches are completely cooled, spoon the spiced mascarpone into the center, lightly sprinkle additional cinnamon over the peaches and top with a drizzle honey
- Enjoy immediately
If you want to prepare this recipe ahead of time, refrigerate the cooked peaches and do not spoon in the spiced mascarpone or garnish the peaches until ready to serve.
