The County View Diner is a true ‘Locals Only’ establishment, nestled between a busy two-lane road and a convenience store soliciting beer, coffee, and Keno. This easily overlooked Diner is where I experienced my first, true, vegetable omelet. Yes, I have previously dined on other vegetable omelet imitators but the Country View Diner restored my faith in the heavenly marriage of fluffy eggs and vegetables.
Stuffed with every vegetable known to man, this giant burrito impersonating egg log was perfectly cooked and gently kissed with melting, creamy cheese before it was served to one unsuspecting customer (me) who was about to go to Downtown Flavor Town. The vegetables were perfectly seared giving the tomatoes and onions a sweetness that perfectly complemented the salty and savory egg in which it was imbedded. Oh and the side of home fries? All I can remember was that they were crunchy and salty, then I looked down at my plate and they were gone. I had inhaled every single perfectly fried, square potato.
Coffee was constantly flowing, the seat-yourself line was almost out the door, and my Massachusetts host and long time college friend, Steve, bumped into five friends who were also enjoying their Sunday morning at the best kept secret in town. From the bickering waitresses to the retro barstools, the Country View Dinner makes me wish I spent every weekend morning in Tyngsboro, Massachusetts.
